Southwestern Steak Bowl with Home-Made Avocado Lime Crema

This delicious southwestern inspired “burrito bowl” is flavorful, easy to make, and IBS friendly!

Ingredients:

  • 4oz steak
  • 1/2 cup white rice
  • 1/8 avocado
  • 1 tbsp lactose/dairy free plain yogurt
  • 1 lime
  • chopped cilantro
  • 1 tbsp cotija cheese
  • garlic infused olive oil
  • salt & pepper

Avocado Crema Directions:

To a bowl or blender, add 1/8 of an avocado (Low FODMAP serving) and mash until smooth. Then add 1 tablespoon lactose/dairy free plain yogurt and 1/2 a tablespoon of lime juice and mix until combined. Drizzle in some garlic olive oil, salt and pepper to taste and mix thoroughly once more. Set your crema in the refrigerator and begin preparing your steak and rice.

Begin cooking 1/2 cup of white rice in 1 cup water over the stovetop for 15 minutes.

Pat your uncooked steak dry with paper towels. Season each side of your meat with salt and pepper, measuring with your heart. Turn your stove top onto medium high heat and wait for the pan to get hot. Add your garlic infused olive oil to the pan (it should simmer and move around the pan when ready). Cook your steak for about 3 minutes each side, only flipping once. Once cooked, remove your steak from the pan and cover it with foil for about 4-5 minutes.

To your 1/2 cup of cooked white rice, add the juice of half a lime, chopped cilantro, and salt to taste. Once your steak has sat in the foil for roughly 5 minutes, uncover and chop to desired size.

To a bowl, place your cilantro rice and steak. Drizzle your avocado crema over the steak and rice and sprinkle cotija cheese (a lactose free cheese for IBS friends) over top. Garnish your southwestern steak bowl with cilantro, a drizzle of garlic infused olive oil and extra lime juice.

Mexican-inspired dishes can be difficult to make when it comes to IBS and a Low FODMAP diet, but I can confidently say that I have mastered this recipe. The avocado crema is a must try, especially if you miss eating lots of avocado in one sitting. Combining the avocado with the lactose free yogurt makes it taste like you’re eating 1/2 an avocado rather than only 1/8! A game-changing discovery if you ask me.
