Mediterranean Pasta Salad: Gluten-Free, Low FODMAP

Makes 6 servings

Pasta Salad Ingredients:

  • 1.5 boxes gluten-free pasta of choice
  • 1 red bell pepper
  • 1 cucumber
  • 1.5 cups cherry tomatoes
  • 1/4 cup green onion tops (low FODMAP)
  • 1/4 cup chopped parsley
  • 1/4 cup kalamata olives
  • 1/4 cup feta cheese (feta is a low lactose cheese)

Pasta Salad Dressing:

  • the juice of 1 lemon
  • 1/3 cup garlic infused olive oil
  • 1/4 cup red wine vinegar
  • salt, pepper, dried oregano, & red chili flakes to taste

Instructions:

In a large pot, bring water to a boil. Be sure to salt your water heavily. Once your water has come to a boil, cook your gluten free pasta.

While your pasta is cooking, chop all your veggies and fresh herbs. Once your pasta is cooked, drain the water and rinse your pasta with cold water so that it does not get sticky or continue to cook. Place ice cubes over your pasta to keep it cool.

For your dressing, add the juice of 1 lemon, 1/3 cup garlic infused olive oil, 1/4 cup red wine vinegar, and your seasonings to a small bowl and whisk to combine all the ingredients.

Once your pasta is fully cooled, remove any ice that hasn’t fully melted and add your noodles to a large bowl. Add all of the chopped vegetable, herbs, and feta cheese to the bowl and pour your dressing over top. Give it a good mix to combine all the ingredients and pop your pasta salad in the fridge for at least 2 hours before serving.
