
Ingredients:
- 2 medium bananas (unripe for low FODMAP)
- 1 cup natural peanut butter (crunchy or smooth)
- 2 eggs
- 1/2 cup coconut or brown sugar (can use 1/3 cup of maple syrup or honey, but omit 1 egg)
- collagen powder (optional, i used 3 scoops- omit 1 egg if not using)
- 1/2 tbsp baking powder
- sprinkle of cinnamon
- pinch of salt
- 1/2 cup dark chocolate chips
Instructions:
Preheat your oven to 325F.
To a large bowl, add two medium bananas and mash. Once mashed, add 1 cup natural peanut butter, 2 eggs, 1/2 cup coconut or brown sugar, collagen powder (optional, but great source of gut-friendly protein), 1/2 tbsp baking powder, a sprinkle of cinnamon, and a pinch of salt. Once all the ingredients are added to your bowl, mix together until your ingredients are combined and your batter is formed. Fold in 1/2 cup dark chocolate chips to the batter and then pour your batter into an 8″x8″ parchment lined dish. Add extra chocolate chips on top because life is short, eat the chocolate.
Place your baking dish on the center rack of your oven and bake for roughly 20 minutes. Cut into 9 squares and enjoy for breakfast, snack or dessert!
