Mac N’ Cheese: Gluten-Free, Low FODMAP

As a self-proclaimed Mac n’ Cheese connoisseur, this dish is everything and more. It is so delicious that it will have you questioning how the heck it’s Low FODMAP.

Makes 2-3 Servings.

Pasta Ingredients:

  • 1 1/2 cups gluten-free pasta (dry pasta measurement)

Cheese Sauce Ingredients:

  • 2 cups almond milk
  • 5 tbsp butter (use vegan butter if you’d like!)
  • 1/4 cup gluten free all-purpose flour
  • 1 tsp paprika
  • salt & pepper to taste
  • 1/2 tsp mustard
  • 2 tsp hot sauce, optional (I used Trader Joe’s Jalapeño Hot Sauce, you can also use Tabasco)
  • 1 1/2cups Low FODMAP cheese of choice, shredded (I used unexpected cheddar from TJ’s, you can also use vegan cheese!)

Breadcrumb Ingredients:

  • 4 tbsp gluten-free breadcrumbs (I used Target brand)
  • 2 tbsp grated parmesan cheese
  • 1 tsp garlic infused olive oil

Instructions:

Preheat your oven to 400F.

In a large pot, bring water to a boil (be sure to salt your water). Once it has boiled, add your gluten free pasta of choice to the pot, making sure to undercook the noodles by a min or 2. This is important because they will cook more in the oven!

While waiting for the water to come to a boil/your pasta to cook, begin to make the cheese sauce. Bring a large saucepan to medium-low heat and add 5 tbsp of butter to your pan, waiting for it to fully melt. Once melted, add 1/4 cup of gluten free flour to the butter and stir (It will be thick and may clump, trust the process). Once combined, add your paprika and mustard and keep stirring. Next, incrementally add your milk, about 1/2 cup at a time, whisking it all together. After you have fully added your 2 cups of milk, let it simmer for roughly 5 min or until it thickens.

Remove from the heat and then add your 1 1/2 cups Low FODMAP cheese of choice and 2 teaspoons hot sauce (optional). Your cheese will need to fully melt and mix evenly with your sauce. Season with salt, pepper, or any other LoFo seasoning that you desire.

Add your drained al dente noodles to the saucepan and fold in your noodles to combine with the sauce. Do not over mix, it will break up your noodles!

Transfer your noodles and sauce into an oven safe bowl or dish and add your breadcrumb mix over top of your Mac n cheese (4 tbsp gluten-free breadcrumbs, 2 tbsp parmesan, 1 tsp garlic infused olive oil- mixed).

Place in your oven and let cook for 20 min and broil for an additional 1-2 min to get the top golden brown. Let your Mac n cheese cool for 5 minutes before serving!
