Carrot Cupcakes: Low FODMAP, Gluten-Free

If you are looking for a spring-time dessert to make for Easter brunch, then this is the recipe for you! These cupcakes are so delicious that you won’t feel deprived of yummy tasting sweets while at your holiday get together!

Dry Ingredients:

  • 1 1/2 cups GF flour (I used a mixture of almond & oat)
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp baking soda
  • 1/4 tsp salt

Wet Ingredients:

  • 1 cup shredded carrot (I only had baby carrots so I blended with my other wet ingredients)
  • 1/2 cup maple syrup
  • 1 egg
  • 2 tbsp olive oil
  • 2 tsp vanilla extract
  • almond milk if needed for consistency
  • 1 unripe banana

Optional:

  • handful chopped walnuts
  • handful raisins

Cream Cheese Frosting Ingredients:

  • 1/3 cup dairy free/lactose free cream cheese (I used Green Valley)
  • 1/4 cup maple syrup

Instructions:

Pre-heat your oven to 350F and line a muffin tray with cupcake liners (spray with non-stick spray), and set aside.

To a medium bowl, combine your dry ingredients and whisk to combine. Once combined, set aside.

To a large bowl or blender, add your wet ingredients. I only had baby carrots, so instead of shredding mine, I blended them. I left the mashed unripe banana out until after blending for consistency. Whisk your wet ingredients if you are not blending!

Once you have all of your wet ingredients combined, add them to your dry ingredients and mix thoroughly. I did not need to add almond milk for the desired batter consistency because I blended, but you want your batter a tad bit runny. Add your mashed banana if you did not already, as well as optional walnuts/raisins

Add your batter into the 12 cupcake liners and bake for 20 minutes! Let your cupcakes fully cool on a cooling rack.

While your cupcakes are cooling, add your frosting ingredients to a small bowl and stir to combine. Refrigerate your frosting until your cupcakes are cool enough to be frosted! I topped my cupcakes with chopped pecans for added texture!

These carrot cupcakes have nourishing, wholesome ingredients, taste amazing, and won’t leave you with that uncomfortable bloat that we all know too well!!
