Low FODMAP Pizza with a 3 Ingredient GF Crust

This pizza is GROUNDBREAKING. Need I say more? This pizza will change your life.

Crust Ingredients:

  • 1/2 cup plain lactose free yogurt (dairy free optional, I haven’t made with dairy free yogurt)
  • 3/4 cup self rising gluten-free flour (I used Bob’s Red Mill GF 1 to 1 baking flour)
  • 1 teaspoon baking powder
  • 2 teaspoons salt (highly recommend but optional)

Instructions: 

Pre-heat your oven to 400F.

In a medium-sized bowl, add 1/2 cup of lactose free yogurt, 3/4 cup of gluten free flour, 1 tablespoon of baking powder, and 2 teaspoons of salt. Mix your ingredients with your hands to combine, turning your ingredients into a dough. Knead your dough for at least 2-3 minutes once it has been combined. Your dough should not be sticky, so if you need to add more flour than the recipe calls for, please do!

Once kneaded, flour a hard surface and roll your dough into a circle. On your stove-top, set your burner to medium high heat and place a large non-stick pan on top of the flame, letting it get hot (do not spray or place any oil onto the pan). Place your dough onto your heated pan and cook for 2-3 minutes, checking to see if your crust is getting golden brown. Once golden, flip your crust and cook the other side for another 2-3 minutes.

Once your crust is golden-brown on both sides, transfer your pizza crust onto a parchment-lined baking sheet. Add your sauce of choice (I used the pesto sauce from my pesto pasta recipe on my blog), parmesan or dairy-free cheese, and veggies/protein of your liking.

Place your decorated pizza on the center rack of your oven, baking for an additional 8-12 minutes, and an extra minute on broil (cook to desired crispiness). Wait 2-3 minutes before cutting to let your pizza cool and the cheese set and then enjoy!

As a pizza lover, finding a pre-made crust without garlic/onion powder in it is nearly impossible, so I wanted to create something that was easy to make and required little to no ingredients while still tasting delicious. Needless to say, this pizza recipe checked all my boxes and succeeded my expectations.
