Panko-Crusted Salmon with Lemon Garlic Pasta- GF, Low FODMAP

This melt in your mouth, flavorful, flakey salmon recipe is hands-down the best fish that I have ever had, low-FODMAP diet or not.

Ingredients:

  • 8oz salmon
  • GF panko bread crumbs (mine are the Target brand)
  • garlic infused olive oil
  • dried oregano, basil & thyme
  • parmesan cheese
  • gluten-free pasta of choice (I used the brand Tinkyada)
  • fresh basil
  • cherry tomatoes (optional)
  • 1 lemon
  • salt & pepper

Directions:

In a small bowl, combine 2 tablespoons of GF panko bread crumbs, 2 teaspoons garlic infused olive oil, 2 teaspoons parmesan cheese, and 1 teaspoon of your dried Italian herbs. Season with salt and pepper to taste, and give it a good mix to combine everything.

Heat your air fryer at 400F for 4 minutes prior to cooking your salmon. If you do not have an air fryer, preheat your oven to 400F.

In a large pot, bring water to a boil, adding olive oil and a heavy pour of salt (we want the water to taste like the ocean). Add your gluten free pasta of choice once your water is boiling and cook it for the allotted time.

Once your air fryer has heated, spray non-stick spray on your frying basket and place your salmon in the fryer skin-side down. Oil the top of your salmon with a light-even layer of garlic infused olive oil, and some extra salt and pepper. Add your panko mixture, evenly coating the top of your salmon. Press down lightly to ensure that the panko crumbs will stick to your salmon.

Once coated, pop your salmon in the air fryer for 8-10 minutes (depending on the thickness of your salmon). For the oven, cook your salmon for 20-25 minutes depending on the thickness as well.

When your pasta is done cooking, drain the water, and add your cooked noodles to a bowl. Add your freshly chopped basil and (optional) chopped cherry tomato. Drizzle your pasta with garlic infused olive oil, a squeeze of lemon juice, and a sprinkle of parmesan cheese. Add your cooked salmon over top, and you are ready to eat!

This dish was *chef’s kiss*. I am drooling just thinking about this dish and it’s only 8 am, which means I am definitely having it for dinner again tonight!
