4 Ingredient Chocolate Chip Cookies

Enjoy for dessert, a snack or even for breakfast! These cookies are simple, easy to digest, and are perfect for anyone with a sweet tooth.

Makes a dozen medium sized cookies.

Ingredients:

  • 3 bananas (unripe for ibs)
  • 2 cups old fashioned oats
  • 1/2 cup (8 tbsp) natural peanut butter
  • 1/4 cup dark chocolate chips
  • 1 tsp vanilla extract (optional)
  • coconut or brown sugar (optional)

Pre-heat your oven to 350F. In a large bowl mash 3 bananas until there are few clumps left. Once mashed, add 1/2 cup of natural peanut butter, mixing it with the mashed banana until they are fully combined. To your banana peanut butter combo, add your first cup of oats, and mix together. Repeat with the second cup of oats and this will be your cookie “dough”. Add your vanilla extract (optional) and give it another stir.

Line a cookie sheet with parchment paper and begin placing your shaped cookie dough onto the sheet. I separate the dough into 12 medium sized cookies and shape them down into circles. There is no rising element to this recipe, so make sure to flatten your cookies before placing them in the oven. The way you form your dough is the way that they will look after baking. Sprinkle your cookies to taste with coconut or brown sugar (optional) for added sweetness.

Place them in the center rack of your oven and bake for 15-20 minutes. Let them cool (if you have self control) and enjoy!

My favorite way to enjoy these cookies is for breakfast after being refrigerated overnight! I know, you’re thinking I’m weird for preferring to eat a cookie cold. Don’t knock it until you try it, I promise you won’t be dissappointed!
